VEGAN LENTIL AND VEGGIE SOUP RECIPE

Hi people of the Internet!

I have been falling behind posting all the recipes I’ve discovered lately. I find a good recipes constantly. Especially as I have my first vegan cookbook to flick through! (Thanks girls!)

I posted this soup on Instagram a while ago and it got a few likes so I’m going to let you in on the recipe so you can see that it does taste as good as it looks.


Ingredients (Serves 3) :- 

-1 x courgette (30p)
-1 x carrot (10p)
-1 x cup of spinach (20p)
-1 x tin of tomatoes (39p)
-1 x packet of pre-cooked puy lentils (£2.00)
-2 x big tomatoes (£1.60)
-1 x clove of garlic (25p)
-1 x tsp of tomato purée (49p)
-1 x bell pepper (67p)
-1 x onion (21p)
– some salt, pepper and chilli flakes

Total price per person- £2.07


So, chop your veggies and then put them in a blender until they are in tiny little pieces. Then, put them into a saucepan to lightly cook. After about 5 minutes, put the chopped tomatoes, purée, and lentils into the pan and season to your taste. You may want to add a little bit of sugar if there is too much of a bitter taste. Slimmer for 15 minutes and you’re done! Enjoy!
